Buttermilk Blueberry Pancakes

Pancakes are awesome, buttermilk pancakes are even better, but buttermilk blueberry pancakes, that’s a match made in heaven. You had me at blueberry.
I consider myself a pancake specialist, which means that I go around sampling pancakes at any and every restaurant I can. Not that this makes me a pancake expert by any means, but I feel like I know my way around a pancake. This pancake recipe rivals any recipe I’ve ever tried, Aida Mollenkamps Cakey Buttermilk Pancakes are the best I’ve ever made! I was eating these without any maple syrup, that’s how tasty they were.

Here we have the batter, lets take a look at the world through the batters eyes, shall we? At this point it’s obvious that I’ve consumed one to many pancakes.

Here we add some butter and syrup, simply because no one ever said no to more butter and more syrup. I’d like to add that the only thing I did differently to this recipe was add blueberries to the batter and 1 teaspoon of vanilla. I also didn’t add the blueberries into the batter, I placed them on top once they were already cooking in the pan.

Ok I’m sorry, I had to take a bite, restraint and I have a bit of a problem, but I’m working on that. I know it’s Monday, but I would say give Monday the finger and have it for dinner. Hell have it for lunch, or just call in sick and have it for brunch. Just don’t tell your boss I gave you the idea 🙂 Enjoy!
